Four-Cheese Pizza with Tomato Sauce and Garlic Herb Crust

Makes 4, 8 to 10-inch pizzas 

The Creamery is celebrating National Cheese Pizza Day with a delicious four cheese pizza recipe. Bringing together the flavors of our Gouda, Baby Cheddar, Monterey Jack and Colby cheeses, this pizza is as cheesy and delicious as it gets.

Ingredients for the tomato sauce

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 anchovy filet
  • 1 tablespoon tomato paste
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 1 can tomato sauce (15 oz.)
  • ½ teaspoon of salt
  • 1 sprig of thyme
  • 1 sprig of basil
  • 1 teaspoon Italian seasoning 

Directions for the tomato sauce:

In a small or medium pot, heat olive oil over medium heat. 

Cook the garlic and anchovy until the garlic is fragrant and the anchovy dissolves. Be careful not to burn the garlic.

Add the tomato paste and cook until it is a shade darker, about 3-4 minutes. Add the red pepper flakes if using.

Add the tomato sauce plus half-a-can of water to the pot. Stir in salt and herbs. 

Simmer on low heat for 30 minutes.

Ingredients for the garlic herb spread:

  • 1 garlic clove
  • ¼ teaspoon Italian seasoning
  • 3 tablespoons unsalted butter, melted
  • ¼ teaspoon salt

Directions for the garlic herb spread:

Combine all ingredients and set aside until the pizzas are ready to bake.

Ingredients for assembling the pizzas:

  • Your favorite pizza dough recipe, or 2 pre-packaged pizza doughs
  • Pizza sauce recipe
  • 3 ounces The Creamery Gouda Cheese, shredded
  • 3 ounces The Creamery Baby Cheddar Cheese, shredded
  • 3 ounces The Creamery Monterey Jack Cheese, shredded
  • 3 ounces The Creamery Colby Cheddar Cheese, shredded
  • Garlic herb spread

Directions for the pizza:

Preheat the oven to 475 degrees Fahrenheit and set two racks in the center and the top-half of the oven. 

Prepare pizza crusts. Separate each portion of dough into two. On a lightly floured surface press out and stretch the dough into an 8 to 10-inch circle.

Lightly oil a sheet pan. Move the dough portion to the sheet pan.

Top the dough with an even layer of pizza sauce. Layer the cheeses on top. 

Brush the garlic herb butter on to the crust.

Bake the pizza on the center rack of the oven for 10 minutes, checking half-way through. To crisp the top of the pizza more, move to the higher rack in the oven to finish.

Let cool, slice, and enjoy!
