Celebrate St. Patrick’s Day with this classic Irish Beer Cheese Dip. Perfect for entertaining, serve this cheesy and delicious appetizer with your favorite Irish beer and transport you and your guests right to a pub in Ireland!

Double the recipe if making for a crowd!
Ingredients:
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- ¼ cup Irish stout or lager beer, like Guinness
- ½ cup milk
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Dijon mustard
- 1 ½ cups of shredded The Creamery Colby cheese
Directions:
In a small-to-medium sauce pot, melt butter over medium heat.
Sprinkle in the flour and whisk to combine with the melted butter to form a roux.
Slowly add in the beer little by little, whisking constantly to combine.
Slowly add in the milk, whisking constantly to combine.
To ensure the roux is not sticking to the bottom of the pot, grab a rubber spatula to scrape all the corners of the pot.
Add in all the spices and Dijon mustard.
Lower the heat and begin to add the cheese in small handfuls. Allow the cheese to melt into the sauce completely before adding the next handful.
Serve with baked pretzels, toasted crostinis, or chips!
