Cheddar and Braised Short Rib Quesadilla

Prep time: 2-4 hours
Cooking time: 15 minutes
Makes: 1 quesadilla


  • 1/2 cup The Creamery Medium Cheddar Cheese, shredded
  • 1/2 cup braised short ribs, or pulled pork
  • 1/4 cup quick-pickled red onion and jalapeños
  • 1 teaspoon vegetable oil
  • 2 flour tortillas
  • salsa, to serve with
  • sour cream, to serve with
  • quick-pickled onions, to serve with


  • Braise short ribs using your favorite slow cooker recipe for 2-4 hours, until fork tender
  • Quick-pickled red onions and jalapeños
    View this simple recipe to create your own quick-pickled veggies.
  • Heat 1 tsp oil over medium heat, add one tortilla to pan
  • Layer cheese, short ribs, pickled onions and jalapenos, top with cheese and other tortilla
  • Flip when bottom tortilla is lightly toasted, and crisp the other side
  • Serve warm, with sour cream and additional pickled onions
