Ingredients
- 1/2 cup The Creamery Medium Cheddar Cheese, shredded
- 1/2 cup braised short ribs, or pulled pork
- 1/4 cup quick-pickled red onion and jalapeños
- 1 teaspoon vegetable oil
- 2 flour tortillas

Instructions
- Braise short ribs using your favorite slow cooker recipe for 2-4 hours, until fork tender
- Quick-pickled red onions and jalapeños

- Layer cheese, short ribs, pickled onions and jalapenos, top with cheese and other tortilla
- Flip when bottom tortilla is lightly toasted, and crisp the other side
- Serve warm, with sour cream and additional pickled onions
