Makes: 1 quesadilla
Ingredients
- 1/2 cup The Creamery Colby Jack Cheese, shredded
- 1 tablespoon butter
- 2-3 medium eggs
- 1/2 tablespoon hot sauce, use more or less deepening on preference
- 1 teaspoon vegetable oil
- 2 flour tortillas
- Optional: your favorite breakfast meat such as bacon, sausage or ham
Instructions
- Preheat pan over medium low
- Whisk eggs in a medium bowl thoroughly
- Add 1 tablespoon butter to heated pan, let foam, then add eggs
- Season with salt and pepper, add half of your shredded cheese and hot sauce to preference
Optional: add any cooked breakfast meat to the eggs in this step - Gently stir the egg mixture as it cooks and remove from the pan when it is little runny, and still slightly wet. Be careful not to overcook the eggs, they will continue to cook when toasting the tortilla
- Heat the oil over medium heat, add one tortilla to pan
- Assemble quesadilla with remaining cheese and scrambled eggs, and top with other tortilla
- Flip when bottom tortilla is lightly toasted, and crisp the other side
- Serve warm, with additional hot sauce
