Make-Ahead Sausage, Egg, and Cheese Breakfast Sandwiches

Start the school year off right with The Creamery’s convenient and delicious make-ahead breakfast sandwich, created to make those hectic school mornings a breeze. Combining fluffy eggs, savory sausage and The Creamery’s Medium Cheddar Cheese, this breakfast sandwich is packed with wholesome ingredients and a burst of cheesy flavor. You can make these sandwiches the night before, or even the week before, creating the perfect grab-n-go breakfast!

Makes 9 sandwiches

Ingredients:

  • 9 eggs
  • ¼ cup milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 pound breakfast sausage
  • 9 English muffins
  • Butter, for toasting
  • 4 ounces of sliced The Creamery Medium Cheddar Cheese
  • Paper towels, parchment paper and tin foil

Directions:

Preheat the oven to 325 degrees Fahrenheit.

Whisk the eggs, milk, salt and pepper until thoroughly combined. Let stand for 10 minutes – this will help make for fluffy eggs.

Butter a 9-inch-by-9-inch baking dish and add the egg mixture.

Bake the eggs for 35-40 minutes, until completely set.

Meanwhile, preheat a pan on the stove over medium heat.

Form the sausage patties slightly larger than the English muffins and press them very thin.

Cook the sausage in the preheated pan for about 5 minutes each side, or until fully cooked. Set aside to cool with the baked eggs.

Increase the oven temperature to 375 degrees Fahrenheit.

Split open the English muffins with a fork. Spread butter onto each half.

Toast the English muffins in the oven (you could also use a toaster or a toaster oven). 

Once all ingredients have fully cooled, prepare for assembly by cutting the eggs into 9 equal square portions.

Assemble the sandwiches with a sausage and egg, and top with a couple slices of cheese.

Wrap each sandwich in a dampened paper towel. This will help keep the sandwich moist after freezing.

Wrap the sandwiches in parchment paper.

Wrap them tightly in tin foil, to prevent freezer burn.

Label and freeze the sandwiches.

When ready to enjoy, remove from the freezer and remove the tin foil and parchment paper. Loosen the paper towel, and microwave for 45-second intervals until warmed through.
